Inside the hot and cold water is a valve spool, which controls the cross-sectional area of the opening of the hot and cold water pipes by rotating. Since the cross-section of the water pipe is round, and the holes inside the spool are also round, the control is not linear.
Another reason is that there is a large delay in adjustment, from the time of triggering the faucet to the water coming out to reach the stable temperature of the current position of the faucet, often about 10-20s, and the delay can easily make people accidentally over-trigger.
